Imagine drinking a refreshing, chilled smoothie that tastes a lot like vanilla ice cream. Now imagine this smoothie having an awesome coffee kick. Oh, and this smoothie is low in carbs and high in fat, making it the perfect keto fat bomb drink.

You don’t have to pinch yourself because you’renot dreaming! All you have to do is make this amazing Vanilla Ice Cream Keto Coffee Smoothie aka your favorite summer drink. (Or fall drink, or winter drink, or spring drink… who says you can’t enjoy smoothies when it’s a little chilly?!)


Ingredients You’ll Need to Make This Vanilla Ice Cream Keto Coffee Smoothie

  • Death Wish Coffee: This is my FAVORITE coffee because it’s super-caffeinated (the company bills it as “The World’s Strongest Coffee“), meaning a little goes a long way. I highly recommend using it in this recipe because it infuses the smoothie with caffeine without making it taste like coffee. (Because you want it to taste like vanilla ice cream!) Alternatively, you can use very strongly brewed coffee, or even no coffee at all.
  • Perfect Keto MCT Oil: MCT oil is loaded with healthy MCTs (medium-chain triglycerides), aka healthy fats. MCTs are a keto diet staple because you can put them in smoothies and coffee, on salads and veggies, etc. Use coupon code FORGETSUGAR20 for 20% off your order!
  • NOW Better Organic Stevia Sweetener: A great keto-friendly sweetener.
  • Viva Naturals Chia Seeds: Chia seeds are a fantastic source of Omega 3s and also do a great job thickening smoothies, puddings, etc.
  • Vanilla extract
  • Unsweetened vanilla almond milk
  • Heavy whipping cream (or, if you’re dairy-free, you can substitute it with nutpods Unsweetened Dairy-Free Creamer)
  • Optional xanthan gum

Let’s Make a Vanilla Ice Cream Keto Coffee Smoothie!

Before making this smoothie, you will need to brew your coffee and then freeze it in an ice cube tray. 12 oz coffee will fit perfectly in a standard ice cube tray, making each cube approximately .75 oz coffee.

Once you have yourcoffee cubes, gather your ingredients andadd them to your blender (I use a Vitamix that I have owned for about 15 years now and it was THE best kitchen appliance purchase ever!)…

How to Thicken Your Vanilla Ice Cream Keto Coffee Smoothie

You have a few options if you want a thicker smoothie:

  • Be patient. The chia seeds will do a good job of thickening the smoothie if you let it sit about 6-8 minutes after blending.
  • Add 1/4 to 1/2 tsp xanthan gum.Xanthan gumis an awesome keto-friendly food that will do a fantastic job of thickening this smoothie. You can get it here!

Ingredients

  • 3.75 oz Death Wish Coffee or strong coffee frozen into ice cubes
  • 1.5 cups unsweetened vanilla almond milk
  • 1 tbsp Perfect Keto MCT Oil
  • 1 tbsp chia seeds
  • 2 tbsp heavy whipping cream
  • 1 tsp vanilla extract
  • 1/8 tsp stevia

Instructions

  • Freeze coffee in an ice cube tray. (12 oz coffee will fill a standard ice cube tray.) Note: If you don't use Death Wish Coffee, you will need to use more coffee cubes if you want the same caffeine content.

  • Add all ingredients to a blender and blend until smooth.

  • Pour in a glass.

Notes

Important note about the caffeine content:According toDeath Wish Coffee's FAQ, there are 54.2 mg caffeine per ounce. A typical Dunkin' Donuts coffee has 12.7 mg per ounce, and a Starbucks coffee has 20.6 mg per ounce. This recipe calls for 3.75oz (5 frozen ice cubes), giving you about 200 mg caffeine. If that is too much caffeine for you, use less Death Wish Coffee.

If you prefer not to use Death Wish Coffee, you can use strongly brewed coffee.

If you don't consume dairy, usenutpods Unsweetened Dairy-Free Creamerinstead of the whipping cream.
